I saw. A guy walking around with a monkey companion that looked like a monk. I was wondering if I could get it for my privateer because it looks cool. Do I get it or do I buy of the crown shop

Your privateer will get him from the quest; Fruit of Creation. Others can purchase him from the crown shop after they complete that quest. Here is a great guide for companions and where they come from and when.
